How to Calculate Food Cost Percentage, Recipe Cost & Bakery Cake Pricing

Step-by-step formulas for restaurant food cost percentage, ideal menu price, custom wedding and birthday cake pricing, and USDA monthly grocery budgets.

1. The food cost percentage and menu pricing formula

To calculate the food cost percentage of any recipe or menu dish, sum the cost of all ingredients used in the batch, divide by the number of servings to find the Portion Cost, and divide that Portion Cost by your Menu Selling Price: Food Cost % = (Portion Cost ÷ Menu Price) × 100.

To find the ideal menu selling price for a target food cost percentage (typically 28% to 33% in profitable restaurants), divide the Portion Cost by the target decimal: Menu Price = Portion Cost ÷ 0.30.

Divide portion cost by your target food cost decimal (e.g. 0.28 or 0.30) to set profitable menu prices.

2. How to price a custom cake, wedding cake, or bakery order

Custom cakes require hours of skilled leveling, filling, crumb-coating, fondant work, and stacking. Calculate your quote by adding: Ingredients Cost + Packaging (cake drum, dowels, box) + (Labor Hours × Hourly Wage) + 15% Kitchen Overhead, then multiply by 1.25 to 1.35 for a 25%–35% business profit margin.
