Gluten-Free French Toast Roll Ups

The ONLY thing better than french toast? Gluten-Free French Toast Rolls Ups stuffed with Nutella! There’s no sweeter way to start the week.

Let’s get to know each other a little better, shall we? Starting with the most important question one can ever ask:

What’s your favorite breakfast food?

It may seem like a silly get to know you question, but brunch choices really do speak volumes about people. The Huffington Post even wrote a whole article on it! And the one thing I am certain of in this world: you can never, I repeat NEVER, trust someone who says they don’t like breakfast food.

So what’s my breakfast of choice (not factoring in health or wellness or those ever present skinny jeans)? FRENCH TOAST. Every time. Hands down.

Embarrassingly enough, this is my first french toast recipe on this blog. What in the WHAT are you doing with your life, Leah?

I’ve brought you delicious overnight oat pancakes, buttermilk waffles, a spinach tomato frittata, red velvet waffles, maple date scones, kimchi huevos rancheros, mocha overnight oatmeal, cinnamon raisin strata, and even an epic overnight sausage & egg casserole (and so much more!) – but no french toast.

While I definitely deserve a good healthy time-out for holding out on you for so long, let me counter with this: not only have I FINALLY brought you a gluten-free french toast recipe, but I have brought you a gluten-free french toast recipe that is stuffed with Nutella and is perfect for eating on the go.

These Gluten-Free French Toast Roll Ups are my everything right now.

Thanks to Canyon Bakehouse’s Mountain White Bread that is so soft, tender, and easy to work with, pulling these babies together is so much easier than you might think.

All you have to do is cut the crust off of the bread, roll the bread out with a rolling pin a bit – just like you do for my epic gluten-free pizza bites! – slather it in nutella, and then go about your normal french toast business: egg wash bath + cook!

By the way, I DO NOT THROW THE CRUST AWAY! Never, ever. I always cube mine up and toss it in the freezer until I have a craving for overnight sausage & egg casserole or I make some homemade gluten-free croutons. There is NO wasting precious gluten-free bread in this household!

Just wait until your first bite. Pure. Bliss. Just warning you – you’ll probably ruined for regular french toast for the rest of forever. Warm, comforting french toast, exploding with hot, melty Nutella – come on. You can’t beat that.

While these french toast sticks are PERFECT popped straight in the ‘ol mouth – no toppings needed – I would be lying if I said I didn’t love dunking them in some real maple syrup.

….And I may have gone as far as slathering a little extra Nutella on the outside a time or two as well. (I mean, I buy the stuff in bulk from Costco if that tells you anything about my Nutella obsession…) Can’t Stop. Won’t Stop.

No matter what breakfast food you prefer, I promise these Gluten-Free French Toast Roll Ups will be a huge hit!

Gluten-Free French Toast Roll Ups

  • 12 slices gluten-free Canyon Bakehouse Mountain White Bread
  • ⅓ cup Nutella or other chocolate spread
  • 2 eggs
  • 2 Tablespoons milk
  • ¼ teaspoon cinnamon
  • ¼ teaspoon gluten-free vanilla extract
  • 2 teaspoons sugar
  1. First of all, Cut the crusts off of the gluten-free bread. Using a rolling pin, gently flatten and roll out each slice of bread. Spread ½ Tablespoon of Nutella on each slice of bread. Tightly roll up each slice, Nutella side in.
  2. In a small shallow bowl, whisk eggs very well. Add milk, cinnamon, gluten-free vanilla, and sugar, continuing to beat well until combined.
  3. Heat a large skillet over medium heat. Dip the rolled bread into the egg mixture, coating well. Place the rolls on the skillet, turning slightly every 15-20 seconds, until cooked through and slightly browned all the way around on the outside.
  4. Remove from the pan, and enjoy!
