Description

Chopped Caprese Salad is a simple and delicious side dish for any BBQ! It’s simple, delicious, and healthy, made with tomatoes, mozzarella, basil, and balsamic vinegar. A family favorite!


Ingredients

Scale
  • 10 ounces cherry or cherub tomatoes, halved
  • 8 ounces whole milk mozzarella, halved or quartered
  • 1/4 cup fresh basil, chopped
  • 1/2 cup high-quality balsamic vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste
  • (Optional: 1 tablespoon olive oil for added flavor)

Instructions

  1.  In a small saucepan, combine the balsamic vinegar and honey over high heat. After this,Bring to a boil, then reduce the heat to a simmer.
  2. Let it simmer for about 10-15 minutes, or until the mixture has reduced by half and thickened to your preference. Be careful not to let it get too thick; a syrupy consistency is ideal.
  3. In a bowl, toss together the cherry tomatoes, mozzarella, basil, salt, and pepper.
  4. Drizzle the balsamic reduction over the salad, adding a little at a time. Toss, taste, and add more reduction if desired.
  5. Serve and enjoy!
