I’m a bit embarrassed to admit how often our dinners consist of tomatoes, basil, and fresh mozzarella. Some of our favorite dishes include Stuffed Caprese Chicken Sandwich, White Chicken Caprese Lasagna, and Cheesy Caprese Dip! My partner Pat and I both love this flavor combination, and our evenings are usually quite simple. You’d think a food blogger cooks every night, but I enjoy the simple things, and this super easy Chopped Caprese Salad is a staple in our home. I’ve added a balsamic reduction on top to dress it up just a bit. You really can’t go wrong with this salad!
I first published this recipe in 2015 after returning from a trip to Italy and Spain. I was inspired by the abundance of cheese, tomatoes, and fresh herbs everywhere—and of course, gelato! I definitely didn’t come back lighter!
During our trip, we tried various versions of Caprese at nearly every meal. Now that we have a baby, this Chopped Caprese Salad is a quick side or meal that’s packed with flavor. Fresh basil is a must—don’t even think about using dried basil!
This tomato and mozzarella salad is great on its own or as a fresh salsa for chicken or fish. Balsamic chicken, anyone? Save some to throw on a burger—yum! The possibilities are endless.

Chopped Caprese Salad is a simple and delicious side dish for any BBQ! It’s simple, delicious, and healthy, made with tomatoes, mozzarella, basil, and balsamic vinegar. A family favorite!
Ingredients
- 10 ounces cherry or cherub tomatoes, halved
- 8 ounces whole milk mozzarella, halved or quartered
- 1/4 cup fresh basil, chopped
- 1/2 cup high-quality balsamic vinegar
- 2 tablespoons honey
- Salt and pepper to taste
- (Optional: 1 tablespoon olive oil for added flavor)
Instructions
- In a small saucepan, combine the balsamic vinegar and honey over high heat. After this,Bring to a boil, then reduce the heat to a simmer.
- Let it simmer for about 10-15 minutes, or until the mixture has reduced by half and thickened to your preference. Be careful not to let it get too thick; a syrupy consistency is ideal.
- In a bowl, toss together the cherry tomatoes, mozzarella, basil, salt, and pepper.
- Drizzle the balsamic reduction over the salad, adding a little at a time. Toss, taste, and add more reduction if desired.
- Serve and enjoy!
