This recipe is surprisingly delicious, even for meat-eaters!
Seriously. If you took a bite right now, you’d be pleasantly surprised and think, “Wow, this actually tastes really good!”
I’ve seen it happen countless times!
One reason I’m sharing this Chipotle Sofritas recipe is that I have a Type-A personality and want to complete my project of sharing all Chipotle copycat recipes.
The second reason is that vegan Chipotle Sofritas is delicious, whether you’re a vegan or not.
How to Press Tofu
Start with extra-firm tofu and squeeze out as much liquid as possible. Here are two easy methods:
- Wrap in Paper Towels: Place the wrapped tofu in a dish and set a heavy item on top, like a large can, a brick, or even your oversized cat.
- Tofu Press: Use a handy tofu press for a quick and easy option.
After pressing, slice the tofu into 8 pieces. If you have two bricks, cut each slab into 4 slices.
Making the Sofritas Marinade
While pressing the tofu, prepare the Sofritas marinade. This consists of fresh tomatoes, peppers, onions, chiles, and a variety of spices.
Simply blend everything in a food processor or blender until smooth. Marinade = done!
Cooking the Tofu
Brown the tofu in a pan to add texture and flavor. It’s so good! It might remind you of griddle cakes.
You can brown the tofu in batches depending on your pan size. Use enough oil to cover where the tofu will touch the pan. If it sticks, don’t worry—just let it cook a bit longer. Don’t flip it too early, or it might stick.
Final Steps
Pulse the browned tofu in your food processor or blender until you have coarse crumbs. Avoid over-blending; larger pieces add nice texture to the final dish.
Combine the shredded tofu with the marinade in a large pan and simmer on the stove until heated through. If you prefer more liquid, add a bit of water.

Ingredients
- 1 tablespoon olive oil or any neutral oil (like rice bran oil)
- 1 (16-ounce) package extra-firm tofu, pressed and cut into 8 slices (see notes)
For the Marinade:
- 1 medium tomato, quartered
- 1/2 yellow onion, quartered
- 2 cloves garlic
- 1 green bell pepper, deseeded (about 1/2 cup)
- 1 teaspoon cumin
- 1 teaspoon ancho chili powder
- 2 chipotle chilies (see notes)
- 2 tablespoons adobo sauce from canned chipotle chilies (see notes)
- 1/2 teaspoon dried Italian oregano
- 1 teaspoon red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water (plus additional for braising the tofu)
Instructions
Cook the Tofu:
- First of all,In a skillet over medium-high heat, warm the oil until shimmering. After this,Carefully add the tofu slices in batches, flipping occasionally, and cook until golden brown, about 10 minutes. Remove from the pan and drain on a plate lined with paper towels.
Make the Marinade:
- In a food processor, combine the tomato, onion, garlic, green bell pepper, cumin, ancho chili powder, chipotle chilies, adobo sauce, oregano, red wine vinegar, salt, pepper, and water. Pulse until the marinade is slightly chunky and well mixed. Set aside.
Marinate the Tofu:
- Roughly chop the cooked tofu or pulse it in the food processor until it’s in 1/4-inch pieces. Place the tofu in a bowl and add the marinade. Cover and let it sit for at least 30 minutes, or overnight in the refrigerator.
Heat and Serve:
- In a medium skillet over medium-high heat, add the marinated tofu and any remaining marinade. Add 1/4 cup water and bring to a boil. Add more water for desired consistency (extra liquid is nice for serving). Reduce to a simmer and cook until heated through, about 10 minutes. Serve warm.
Notes
- Pressing Tofu: To remove moisture, drain the tofu, wrap it in paper towels, and place a heavy object on top for about 15 minutes. Alternatively, use a tofu press.
- Using Adobo Sauce and Chipotle Chilies: Strain the adobo sauce into a bowl, pressing the peppers to extract as much liquid as possible (aim for at least 1/4 cup). Reserve any remaining chipotle chilies and sauce for future use.
