Description

Here’s my classic homemade sausage gravy recipe, also known as “sawmill gravy,” which requires just 4 ingredients and can be made in about 15 minutes, making it a perfect breakfast staple to enjoy alongside my 5-star foolproof biscuits!


Ingredients

  • 1 lb (455 g) pork breakfast sausage (sage-flavored recommended)
  • ¼ cup (31 g) all-purpose flour
  • 2 ½ cups (590 ml) whole milk
  • ⅛ teaspoon crushed red pepper (optional)
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Place 1 lb (455 g) of pork breakfast sausage in a skillet over medium/high heat.
  2. While cooking the sausage, use a spatula or wooden spoon to break it up and crumble it until it is completely browned with no pink remaining, without draining the skillet.
  3. Sprinkle ¼ cup (31 g) of all-purpose flour evenly over the sausage crumbles and stir frequently until the flour is absorbed, which should take about 1 minute.
  4. Slowly drizzle 2 ½ cups of whole milk into your skillet while stirring, and add crushed red pepper if desired.
  5. Continue cooking and stirring frequently until the mixture thickens and reaches your desired consistency.
  6. Serve warm over homemade biscuits, adding salt and freshly cracked black pepper to taste!

 

Notes

  1. You can make sausage gravy the night before and store it in an airtight container in the refrigerator, then reheat it in a skillet over medium/low heat, adding a splash of milk to stir in as it thickens.
