Description

Shredded tofu braised in spices, making a great vegan option for burritos, tacos, and salads, this Chipotle Sofritas recipe tastes just like the original!


Ingredients

Scale
  • 1 tablespoon olive oil or any neutral oil (like rice bran oil)
  • 1 (16-ounce) package extra-firm tofu, pressed and cut into 8 slices (see notes)

For the Marinade:

  • 1 medium tomato, quartered
  • 1/2 yellow onion, quartered
  • 2 cloves garlic
  • 1 green bell pepper, deseeded (about 1/2 cup)
  • 1 teaspoon cumin
  • 1 teaspoon ancho chili powder
  • 2 chipotle chilies (see notes)
  • 2 tablespoons adobo sauce from canned chipotle chilies (see notes)
  • 1/2 teaspoon dried Italian oregano
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water (plus additional for braising the tofu)

Instructions

Cook the Tofu:

  1. First of all,In a skillet over medium-high heat, warm the oil until shimmering. After this,Carefully add the tofu slices in batches, flipping occasionally, and cook until golden brown, about 10 minutes. Remove from the pan and drain on a plate lined with paper towels.

Make the Marinade:

  1. In a food processor, combine the tomato, onion, garlic, green bell pepper, cumin, ancho chili powder, chipotle chilies, adobo sauce, oregano, red wine vinegar, salt, pepper, and water. Pulse until the marinade is slightly chunky and well mixed. Set aside.

Marinate the Tofu:

  1.    Roughly chop the cooked tofu or pulse it in the food processor until it’s in 1/4-inch pieces. Place the tofu in a bowl and add the marinade. Cover and let it sit for at least 30 minutes, or overnight in the refrigerator.

Heat and Serve:

  1. In a medium skillet over medium-high heat, add the marinated tofu and any remaining marinade. Add 1/4 cup water and bring to a boil. Add more water for desired consistency (extra liquid is nice for serving). Reduce to a simmer and cook until heated through, about 10 minutes. Serve warm.

Notes

  1. Pressing Tofu: To remove moisture, drain the tofu, wrap it in paper towels, and place a heavy object on top for about 15 minutes. Alternatively, use a tofu press.
  2. Using Adobo Sauce and Chipotle Chilies: Strain the adobo sauce into a bowl, pressing the peppers to extract as much liquid as possible (aim for at least 1/4 cup). Reserve any remaining chipotle chilies and sauce for future use.
