This Chicken Parmesan Pasta recipe uses only 6 ingredients and is made in ONE PAN! It’s our go-to easy dinner whenever we crave comfort food. A delicious chicken and pasta dish that everyone in the family will love!
Ingredients
- 2 tablespoons Italian dressing(not creamy)
- 3 boneless, skinless chicken breasts, cut into small cubes
- 16 ounces rigatoni pasta (small to medium size)
- 1 (24-ounce) jar marinara sauce (I love Delallo’s)
- ½ cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh basil for garnish (optional)
Instructions
- Heat Chicken: In a large 12-inch skillet over medium-high heat, combine the chicken and Italian dressing. Season with salt and pepper. (If you don’t have a large skillet, a stockpot will work too.
- Cook Chicken: Cook the chicken for about 5 minutes, or until it’s browned and cooked through, depending on the thickness.
- Add Pasta and Sauce: Add the rigatoni and the entire jar of marinara sauce. Fill the empty marinara jar with water and add it to the skillet. If using a stockpot, use 2 cups of water. Stir lightly to combine.
- Cook Pasta: Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until the pasta is tender.
- Add Cheese: Top the mixture with grated Parmesan and shredded mozzarella. Do not stir. After this,Cook for an additional approximately 2-3 minutes, or until the cheese is fully melted. For extra melty cheese, you can broil the skillet for about 4 minutes.
- Serve: Garnish with chopped basil if desired and enjoy!
Notes
- The pasta in the middle of the skillet will be softer than the pasta on the edges. It’s fine if some pieces are a bit toastier; the inside will be tender.
