I feel like I’ve been searching for the perfect restaurant-style white queso recipe for Taco Night my entire life. Why is it so hard to find? All I want is delicious, gooey cheese in molten form for every meal.
I dream of mastering an easy queso recipe, but I’ve only found that perfection at Mexican restaurants. Their secret recipes have eluded me for years. Now, we can all enjoy it at home!

Different Types of Queso Recipes
This queso dip is what I serve at every tailgating party, summer BBQ, and anytime I’m craving cheese. While I have many cheese dip recipes on this site, this White Queso Blanco is hands down my favorite.
I’ve made cheese dips of all kinds, from Chicken Enchilada Dip to Vegan Queso. I love them all, but this White Queso Recipe is my go-to. It can be served with anything or as an appetizer.
I almost always make homemade tortilla chips to dip into all that cheesy goodness. It’s worth the extra time, and they’re baked, not fried!
How to Make Easy and Creamy Queso
Making the perfect queso is easier than you might think. It does require some time at the stove, but I believe in you! Here are the steps:
- Heat evaporated milk over medium-high heat.
- Once simmering, reduce the heat to low. Tip: Don’t let the milk boil over!
- Stir in the cheese in batches until fully melted. It’s that easy!
- Once all the cheese is melted, stir in any add-ins you want, such as cooked hamburger, jalapeños, or tomatoes. Don’t hesitate to try new flavors!
- Grab your chips and enjoy! You can also use it to enhance recipes like Smothered Chicken Fajitas or Perfect Chicken Nachos.

Queso cheese dip is the cheese dip of your dreams! It’s a copycat version of your favorite restaurant’s chips and cheese, loaded with green chiles, spices, and topped with cilantro, jalapeños, and tomatoes.

Tips for Making This Queso Dip Smooth
We’ve made this Queso Recipe easy so anyone can make it perfectly every time. Here are some tips:
- Use evaporated milk instead of regular milk, cream, or half-and-half. When I first posted this recipe, I used half-and-half, but some readers experienced separation. Using evaporated milk should solve that issue.
- Don’t let the milk overheat. Once it reaches a light simmer, reduce to low. Cheese dip that gets too hot can become grainy, and we don’t want that!
- We’ve added cornstarch to thicken the cheese dip, and it works great!

Ingredients
- 12 ounces evaporated milk (1 can)
- 1 tablespoon cornstarch
- 3/4 lb white American cheese (buy it sliced at the deli and chop into small squares)
- 4 ounces mozzarella cheese (shredded)
- 2 of tablespoons canned jalapeños (chopped) or chopped green chiles
- 1 teaspoon chili powder (or cumin, if you prefer)
- ½ teaspoon ground nutmeg (optional; some people like it, some don’t—see note below)
- 1 teaspoon red pepper flakes
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Chopped cilantro, sliced tomatoes, and jalapeños for garnish
Instructions
- Heat the evaporated milk in a small saucepan over medium-high heat. After this,Stir in the cornstarch and whisk to combine.
- Once it starts to simmer (just before boiling), reduce the heat to low immediately.
- Stir in the white American cheese in batches while whisking constantly. Increase the heat to medium-low and keep whisking until the cheese is melted and creamy. Add more cheese as each batch melts.
- After the white American cheese is melted, add the shredded mozzarella. Continue to whisk constantly until melted and creamy. Add more mozzarella if you prefer a thicker consistency.
- Once all the cheese is melted, stir in the jalapeños, chili powder, nutmeg, red pepper flakes, salt, and pepper.
- If you want the queso to be browned like in the pictures, pour it into a small nonstick skillet and broil in the oven for 3-4 minutes, or until bubbly and browned (optional).
- Top with chopped cilantro, tomatoes, and more jalapeños if desired.
- Serve with tortilla chips and enjoy!
Notes
- Store the dip in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave with a splash of half-and-half or milk to keep it creamy.
- Some people may not prefer the spice from the cumin and nutmeg. If you’re unsure, start with a small amount and adjust to your taste. If you prefer a milder cheese flavor, feel free to leave them out!
- For making this in a slow cooker: Start on high, adding the cheese and half-and-half. Once melted, turn the setting to low and add the spices and remaining ingredients. Stir often and enjoy!
