To bird, or not to bird? That is the question! Grocery store rotisserie chicken can be hit or miss. When it’s good, it’s great. But when it’s old or dried out, it just sits in the fridge. How long do they sit under those lamps, anyway? This makes me feel guilty for buying it.

I decided the best way to ensure I had delicious rotisserie chicken every time was to make it myself.

You don’t need a rotisserie cooker, a fancy grill, or a rotisserie spit to make amazing roasted chicken. It can be much better than rotisserie chicken from Costco, Sam’s Club, or any grocery store. The best rotisserie chicken recipe requires just a few spices, a chicken, and an oven (or a crockpot).

I’ve perfected a dry rub for rotisserie chicken. You can make it in large batches to use whenever you need it. Cook a chicken (or two) on the weekend to enjoy throughout the week. You can even bring one to your mom or your neighbors who just had a baby.

Do I have to truss the chicken?

Well, no. You’re an adult, and trussing chickens is a choice you can make.

That said, I hope you do. Trussing your chicken helps it cook evenly and stay juicy.

At first, it might seem unnecessary. But trussing ensures delicious, evenly-cooked poultry that looks great too. I’ll show you how to truss a chicken using twine for your best roast chicken yet.

How to Make Rotisserie Chicken in the Oven

The key to making authentic rotisserie chicken is the dry rub. You’ll need dried thyme, paprika, garlic powder, onion powder, and a little salt and pepper.

  1. Start by brushing olive oil all over the chicken. This helps the dry rub stick to the skin.
  2. Next, use the dry rub generously, patting it onto the chicken to ensure it adheres well.
  3. Then, move the chicken into a roasting pan. You can use a glass baking dish, a heavy-duty roaster, or even a cast iron skillet.
  4. Bake your rotisserie chicken at 425 degrees for 70-80 minutes. Make sure it reaches an internal temperature of 165 degrees.

After baking, you can enjoy it right away or keep it warm in a crockpot for later.

How to Make Rotisserie Chicken in a Slow Cooker

Making rotisserie chicken Recipe in a slow cooker won’t give you crispy skin like roasting in the oven. However, it will still produce tender and juicy results.

  1. First, transfer your spice-rubbed chicken to the slow cooker.
  2. Cook it on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours.

Can You Make Rotisserie Chicken Recipe in a Toaster Oven?

Some larger countertop toaster ovens can fit a whole chicken. However, it’s best to check the manual first to be sure. If your toaster oven has a rotisserie feature, give it a try! Let me know how it turns out!

How to Roast 2 Chickens

What’s better than one rotisserie chicken? Two! It doesn’t take any more time to cook. Plus, it’s a great way to use that large turkey roaster you only use for Thanksgiving.

Making two chickens means you’ll have plenty to eat for the days ahead. You can also cook two and give one to someone who could use a good meal.

All you need to do is make a double batch of dry rub. Then, place the chickens side by side in a larger roaster to cook.

How Long Do You Cook Rotisserie Chicken?

If you’re using an oven, roast the chicken uncovered at 425 degrees for 70-80 minutes. Cook until it reaches 165 degrees internally. I recommend using chickens that weigh around 4-5 pounds each.

If you’re cooking rotisserie chicken in a crockpot, it will take 3-4 hours on the HIGH setting or 6-8 hours on the LOW setting.

To keep your chicken fresh, refrigerate it in shallow airtight containers. Wrap it tightly in foil or plastic wrap. When stored properly, cooked rotisserie chicken will last for 3 to 4 days in the refrigerator.

  • 2 teaspoons paprika 
  •  1½ teaspoons dried thyme 
  • 1 teaspoon garlic powder 
  •  1 teaspoon onion powder 
  • Salt and freshly ground black pepper 
  • Approximately 1 whole chicken (4 to 5 pounds) 
  •  2 tablespoons olive oil  

Instructions

  1. Move the oven rack to the lowest position and preheat the oven to 425 degrees.
  2. In a small bowl, mix together the paprika, thyme, garlic powder, onion powder, 2 teaspoons of salt, and ½ teaspoon of pepper.
  3. Remove any giblets from the chicken, if present. After this,Brush the outside of the chicken with olive oil. Rub the spice mixture all over the chicken (using disposable gloves is helpful).
  4. If you like, truss the chicken. After this,Place it in a baking dish or on a rimmed baking sheet.
  5. Bake uncovered until the internal temperature reaches 165 degrees, about 70 to 80 minutes. You can brush the chicken with the juices from the dish every 20 minutes to keep it moist.
  6. Serve immediately or place in a slow cooker on the lowest heat setting for up to 8 hours.

Notes

  1. You can use 4 to 5 pounds of chicken pieces, such as breasts, thighs, or quarters. Reduce the baking time to approximately 30 to 45 minutes.
  2. After applying the spice blend, the chicken can be refrigerated for up to 24 hours before baking.
